Yes I know… as usual Sarah is late to the party… AGAIN. This time it’s the Avocado toast party. Now of course I use avocados a lot but I personally use them mainly for smoothies. But when your Pinterest board gets flooded with pictures of Avo-toasts, you have no choice but to succumb. So, here I am like the rest of the world spreading the Avo-Love.
Now with the summer holidays coming to an end, I’m sure students (and the working peeps too) will really appreciate a quick yet healthy breakfast option. And trust me when I say an Avocado toast FILLS YOU UP. The other day the “gang” came over to watch Game of thrones and as usual, Colin needs his “TV-watching-snacks”. So I whipped up a quick scrambled eggs and avocado sandwich, and boy were we stuffed, while being entertained because who does not love GOT!
Not forgetting my two resident Avo-Lovers, my dear colleagues A & J who are both OBSESSED with Avocados. Dear J, if you are reading this, when you are back in town you can impress your lady love with these Avo-toasts. 😉
Anyone can make this… literally anyone. One avocado can knock out two breakfast-toasts. If you are preparing for one, use one side and store leftovers in a plastic bag with the pit still intact. It should be ok for 2-4 days. Slice off any brown edges before use.
I have provided you with 5 toast options, one for each day of the working week. If you are creative, the combinations are endless.

Avo-toast with an Egg-Sunny side up: Ooooo… I love the gooey goodness of the yolks.
